Project 23:

Maturity

Technological Transfer and Management

Description:
The dependency of phenilpropanoid pathway enzyme activity and the concentration of compounds of enological interest, of sugars and organic acids with respect to the different combinations of load, light and hydric supply in the Carménère variety will be determined.
The idea is to get to know the simultaneous variations in the levels of sugars, organic acids, tannins and antocians and their level of polymerization, and the gene expression of the enzymes responsible for the synthesis of these compounds in the maturation process of Carménère cultivar berries. In addition, the effect of the different levels of hydric stress and lighting of the grape bunches, on the quality of the tannins and compounds responsible for the color of the grape in this variety will be determined; and the effect of the different levels of production on the maturation parameters of the berries will be established.

Outcomes:
Get to know the simultaneous variations in the levels of sugars, organic acids, tannins and antocians and their polymerization level, and gene expression of the enzymes responsible for the synthesis of these compounds in the maturation process of cv. Carménère vine berries.
Get to know the effect of the different levels of hydric stress on the quality of the tannins and compounds responsible for the color in the cv Carménère grapes.
Get to know the effect that the different levels of lighting on the bunch have on the quality of tannins and of the compounds responsible for the color in cv Carménère wine grapes.
Determine the effect of the different levels of production on berry maturation parameters.

Researcher’s comment:
Through the restriction of growth conditions and yield, agronomic work at the vineyards tends to increase quality. Such management must consider very carefully the balance among the gains in organoletpic attributes and the price of produced wine and the losses in yield, as well as the magnitude in the loss in physiological activity at the sacrificed plant level.
