Amines
Description:
This project is aimed at determining the presence and content of biogenic
amines in Chilean wines and studying the evolution of these amines during
the processes of viniculture and their subsequent breeding in barrick
and in bottle. The 10 most common biogenic amines found in wines, which
cause allergies and other pathologies in human beings will be analyzed
via HPLC.
In addition, based on the follow up of their evolution in the different
phases of wine making, the critical points of biogenic amine formation
will be determined in order to propose technical solutions for their control.
It is worth noting that European countries are requiring the quantification
of biogenic amines in imported wines.
Outcomes:
Determine the critical points of biogenic amine formation (which cause
allergies and other pathologies in human beings) to propose technical
solutions for their control.
Researcher’s comment:
Although biogenic amines are found in various types of food items, they
are being increasingly questioned due to the incidence on allergies and
poisoning that they can cause in certain percentage of the population,
particularly in the European Union.
In wines, the limits allowed by the legislation of importing countries
are particularly demanding, given that the action of such amines is enhanced
by alcohol.
